Your pancakes are guaranteed to be a success
Whether for a sweet preparation or hearty: the perfect pancake batter should be especially fluffy. There are two options:

  1. You separate the eggs and fold the egg whites under the batter as stiffly beaten egg whites.
  2. You add a dash of mineral water to the dough, the carbon dioxide also loosens the dough.

American pancakes, on the other hand, which are traditionally eaten with maple syrup, are significantly heavier in terms of the batter – they need a lot of leavening agents to give them up. For the extra light crepe dough, swap 100 ml of milk for water to make the dough crispier. You see: pancakes are not always pancakes!

Hearty stuffed pancakes: recipe

ingredients

  • For the pancakes:
  • 300 g of flour
  • 4 eggs
  • 250 ml milk
  • 1 pinch of salt
  • Olive oil or butter for frying
  • For the minced meat filling:
  • 500 g mixed minced meat
  • 200 g sour cream
  • grated gratin cheese (e.g. Emmentaler)
  • Parsley, salt, pepper
  • For the onion and ham filling:
  • 10 g butter or margarine
  • 2 onions
  • 200 g ham
  • 200 g sour cream
  • grated gratin cheese (e.g. Emmentaler)
  • Parsley, salt, pepper

Preparation of the pancakes with filling

  1. Put the flour, salt, milk and eggs in a mixing bowl and mix with the hand mixer to form a smooth dough. Brush the hot pan with olive oil or butter and bake the dough in it.
  2. For the onion and ham filling, heat the butter or margarine in a saucepan. Lightly sweat the onions in it. Dice the ham, chop the fresh parsley and add both to the onions. Put the filling on the pancakes and roll up. Place the pancake rolls in a baking dish and sprinkle with gratin cheese. Bake for 15 minutes at approx. 190 ° C, until the cheese is golden brown. Serve warm.
  3. For the minced meat filling: Fry the minced meat in olive oil, mix with salt, pepper and fresh, chopped parsley. Stir in the sour cream. Put the filling on the pancakes and roll up. Place the pancake rolls in a baking dish and sprinkle with gratin cheese. Bake for 15 minutes at approx. 190 ° C until the cheese is golden brown. Serve warm.
