Snow peas are real all-rounders when it comes to preparation, as they are suitable as components for many dishes. However, many shy away from taking the crunchy vegetables with them: They don’t know how to prepare the sugar snap peas! It’s so easy – we’ll tell you how to do it!
Prepare, store, and freeze sugar snap peas
Snow peas are peas that are harvested young. This allows you to eat the whole pod and not just the fruit inside. Of course, the taste of peas is clearly retained, but the pods are sweeter and also juicy and crunchy.
As the name suggests, the vegetables contain sugar, which ensures the incomparable taste. Before cooking, all you have to do is rinse the vegetables and remove the fine thread on the side of the pods with a sharp knife. This one is difficult to chew. The legumes should only be stored briefly (1 – 2 days) in the refrigerator so that they stay nice and crisp. If you don’t use the vegetables right away, freeze them. After washing and cleaning, first blanch the pods, after draining and cooling they go into the freezer.
Tip: Since sugar snap peas are healthy and low in fat, you should bring the vegetables on the table more often: They contain important minerals such as iron, phosphate or potassium. Provitamin A is also found in the delicate green of peas, which is good for skin and eyesight. Although the legumes have a sweet taste, 100 g only contain 65 kcal. So they are a real asset in the kitchen!
By the way: The sugar snap peas are also called snow peas, sugar peas or crispy peas . But they are one and the same vegetable!
Boil sugar snap peas
Only when you cook sugar peas do they develop their full flavour. The pods are actually only blanched, which makes them one of the most relaxed vegetables when it comes to preparation. Simply put the sugar snap peas in salted, boiling water. The vegetables don’t have to cook for more than three minutes. Pour it over a colander and rinse the pods with cold water. By the way, blanching keeps the vegetables their rich green colour. Preparing snow peas can be done in no time!
Prepare sugar snap peas: fry them in a wok
The preparation in the wok (or in normal pans) is extremely popular. Ultimately, many people only know sugar snap peas from Asian cuisine.
The sugar snap peas are fried together with other vegetables, garlic must of course not be missing: Cut one or two cloves of garlic into slices and add them to the wok or pan with a little wok oil or other neutral oil. Set the stove to high heat and add the prepared, raw sugar snap peas (and other vegetables) to the garlic. Briefly toss everything in the garlic oil, then it is ready to serve.
Of course, you can also flavour the pods with other ingredients such as onions, ginger, chilli or herbs. Deglazing with soy sauce, white wine or a little vegetable stock provides additional aroma. Tip: When roasting in the wok, high heat is used, but the vegetables are only seared very briefly so that they stay nice and crisp.
Cook snow peas with other vegetables
Sugar snap peas are also very good in stews , vegetable stir-fries or curries . They bring freshness and bite into play. So that you don’t overcook the pods, you should add them at the very end. Let the vegetables simmer for about three to five minutes.
Eat sugar snap peas raw
Eating the pulses raw is also not a problem at all. You can make a salad from raw sugar snap peas, for example. Freezing is also possible: Blanch the pods as described above, frighten them and pat them dry. They can then be put in a freezer bag in the refrigerator compartment.
