Brussels sprouts are not for everyone, but those who like them will love this recipe! We reveal how you can conjure up a creamy, fluffy puree from healthy vegetables.
Recipe for brussel sprouts puree
ingredients
- 250 g Brussels sprouts
- 1 tbsp butter
- 1 piece of leek
- salt and pepper
- 7 bunches of parsley
- 2 teaspoons of coriander
- 1/2 lemon
- 1 1/2 tbsp crème fraiche
Preparation of the puree
First, prepare the Brussels sprouts : clean them thoroughly, cut away its stunk, cut it in half and cut it into fine slices. Also wash the leek and cut it into fine pieces.
Heat the butter in a saucepan and sauté the cabbage in it. Then add approx. 100 ml of water and let the vegetables cook for approx. 5-7 minutes with the lid closed. The water should evaporate completely during this time. If not everything has evaporated, you may have to pour off the remaining water.
Now add the crème fraiche, mix well with the vegetables and puree everything well with a hand blender. Then wash and finely chop the parsley.
Your puree is as good as done! To season this properly, add enough salt and pepper, as well as the coriander, the parsley and the juice of the lemon.
