Streusel are for lovers: when lightly baked, they are buttery-soft, melt on the tongue and always taste like more – just like grandma’s! And when they are golden-brown and crispy, they look great and beautify cakes or crumble. We have two great recipes with guaranteed success and lots of good tips!

With just a few ingredients to the perfect streusel
Streusel is quick to make and consists of just three ingredients: flour, butter and sugar. To cover a cake with a diameter of 26 centimeters with sprinkles, you will need about 200 grams of flour, 100 grams of butter and 60 grams of sugar. For an entire baking sheet to be covered with sprinkles, you will need about 300 grams of flour, 150 grams of butter, and 100 grams of sugar. Simply knead the ingredients together. You can also give the flakes a special aroma by adding vanilla, cinnamon or lemon. The perfect crumble cake is ready – delicious!

Finely crumbly or big and soft?
But even with these few ingredients, very different sprinkles can be created. If you use soft butter, the sprinkles will usually be large and soft. When the butter is cold, large but compact crumbles are created. If you work the mixture very long and hard, the crumbles will often become more crumbly and smaller, so that they will also become firmer and crispy when baking. Basically, the ingredients only have to be mixed together thoroughly. You can either use your hands or an electric dough hook.

What are streusel used for?
You can use the buttery flakes for a wide variety of cakes and desserts as a decoration or delicious topping. Muffins are twice as good, apple cakes get their special touch and simple sheet cakes become eye-catchers thanks to the additional layer. Try a crumble , a kind of crumble cake without a base, but with a lot of fruit. If you like it juicy, this dessert could be for you. But also creams , fruit salads or other desserts can be refined with the baked butter flakes.

Basic recipe: apple sheet cake with sprinkles
Ingredients for the dough:

  • 1.5 kg of apples
  • 380 g flour
  • 200 g soft butter
  • 200 g of sugar
  • 4 eggs
  • 50 ml of milk
  • 1 packet of baking powder
  • 1 packet of vanilla sugar

Ingredients for the crumble:

  • 300 g of flour
  • 150 g soft butter
  • 100 g of sugar
  • Preparation of the basic recipe:

For the crumble cake, first put the butter in a mixing bowl and knead it until it is very creamy. Then sugar, vanilla sugar and eggs are incorporated.
Sift the flour and baking powder into the cream and stir everything together until a batter is formed. This becomes a little smoother with the milk.
Line a baking sheet with parchment paper and spread the dough on it as evenly as possible.
Now peel and core the apples and cut them into fine wedges. The pulp is then spread over the dough.
At 170 degrees, the cake should bake for about 18 minutes. During this time you can make the sprinkles. To do this, put butter, flour and sugar in a clean bowl and quickly mix all the ingredients with your hands until you have large, soft flakes.
After the first baking time, take the baking sheet out of the oven and spread the crumble on the apples. When the tray is completely covered, the sheet cake can be put back in the oven for around 15 minutes – or until the crumble has reached the desired browning level.
Streusel with oat flakes
If you like it a bit more wholesome and also bitter, you will love streusel with oat flakes. Part of the flour is replaced by oat flakes. Try them, they are really tasty!

Ingredients:

  • 160 g of flour
  • 60 g tender oat flakes
  • 150 g butter
  • 100 g of sugar
  • Preparation:

Put the flour and sugar in a bowl and knead in the butter. As soon as the crumbles have formed, the oat flakes are loosely kneaded.
