Making pasta yourself is usually not that easy, although it looks great and is also much tastier than the pasta from the bag. Often you need a pasta machine and a lot of patience and patience.
However, there are also two Italian pasta specialties that you can make yourself easily and in no time at all: ravioli and tortellini. These two even have the special feature that they are filled and thus no longer require any great sauce skills. This is how you can easily make ravioli and tortellini yourself.
Make ravioli and tortellini yourself: recipe
With a simple recipe for the dough, you can easily make both ravioli and tortellini yourself. The only difference is the shape of the dumplings. While ravioli are usually rectangular, triangular or moon-shaped with a jagged edge, tortellini are characterized by their round shape.
Ingredients for the dough for 4 people
- 400 grams of flour
- 4 large eggs
- A pinch of salt
Preparation of the dough: Knead all ingredients together and cover and let rest for 30 minutes.
The most important thing with homemade ravioli and tortellini is the filling. Vegetables, spinach, meat and cheese (for example ricotta, parmesan and mozzarella) are well suited for this.
Recipe for a delicious ricotta filling
Ingredients for the filling
- 1 large bunch of basil
- ½ organic lemon
- 300g ricotta
- 125g grated parmesan
- 1 egg
Preparing the filling
Wash, dry and finely chop the basil
Rub the peel of half an organic lemon
Mix the ricotta, parmesan and egg together and fold in the basil and lemon
Season the filling with salt and pepper
Completion of the pasta
Now the dough can be rolled out in portions on a floured surface. You can now cut out circles with a pasta cookie cutter or a glass with a diameter of about five centimetres. Now put a teaspoon of the ricotta filling in the middle of the dough cookies and fold the circle together.
For the ravioli, press the edges with the tip of a fork so that the pattern of the fork is imprinted on the dough. For tortellini, you can simply press the edges of the dough together with your fingers.
Then take the two edges and pull together so that a tortellini is formed and simply press the edges back together.
The dumplings are placed in boiling salted water for 3 minutes and can then be consumed.

It goes best with a light sauce made only of butter and sage . To do this, take a large piece of butter and sauté 15 sage leaves in it. The dumplings can be swivelled in it. A pinch of parmesan goes well with the Italian specialty.
