INGREDIENTS
4 or 5 large potatoes
5 or 6 eggs
Olive oil

ELABORATION

We peel the potatoes into slices as thinly as we can and put them in a microwave-safe container, add salt and a good jet of olive oil, cover it with transparent film, and put it in the micro for about 14 minutes (the time depends on the power of each microwave, we take it out when we see it golden and soft).

In another container we beat the salted eggs, I like to beat the whites before giving it a little air without actually mounting and then pour the yolks and potatoes, so it comes out much more fluffy.

We pour the mixture into a pan that we have previously prepared with a drizzle of olive oil and heat it.

We leave about 3 minutes for it to be done and we turn it over with the help of a large flat plate.

We make according to taste, I love it undercooked.
