1 rabbit of 1,250 gr. approx.
3 garlic cloves
1 medium-size tomato
chopped seasonal vegetables
1 glass of red wine (pagès)
200 gr of mushrooms
The rabbit is passed through flour, fried, and set aside. The garlic, onion, and grated tomato are browned in the same oil.
When everything is golden, add the rabbit (without the liver) and the glass of red wine.
After a 1/2 hour, we add the chopped vegetables together with the liver and the broth that we have previously passed through the turbomix.
We let another ten minutes pass and we add the mushrooms that we have picked in the field closest to our house, failing that, the market or store and in five more minutes we serve and eat.
