1 l. of fish broth.
1 glass of white wine.

The suquet de peix is a typical dish of Valencian cuisine. It is a recipe with an intense flavor that fishermen prepare in the past at the end of their day and on the boat. It consists of a simple stew made from battered fish.
We brown three or four cloves of garlic in a casserole and reserve them to later make the mince with the parsley. Meanwhile, we take the heads and the fish bones to prepare a broth. You can add vegetables such as leek or carrot.
Sauté a little onion and add crushed tomato. We add white wine and reduce the mixture. Then we cut potatoes into cubes and add them to this mixture, sautéing everything for about 5-6 minutes.
We cover everything with the fish stock and cook it over medium heat for about 15-20 minutes. Halfway through cooking, we will add the minced garlic with the parsley.
Several minutes before the potatoes are cooked, we add some slices of fish, previously seasoned.
